Title: Parsley Buttered New Potatoes

2lbRed potatoes, small, washed
  Salt
  Water
1/4lbButter
1clGarlic, minced
3tbParsley, chopped

Peel a small strip around the middle of each potato. Boil potatoes in salted water until tender. Drain. Melt butter in a saucepan. Saute garlic briefly. Toss hot potatoes in butter and garlic; sprinkle generously with chopped parsley. Serve hot.
